These deliciously simple cookies are not only light to eat but by adding the lemon zest in the dough also delivers some major health benefits. It has been proved that a certain substance found in the peel of lemons could help decrease cancer risk too.

PREP TIME: 12 min / COOK TIME: 15 min / TOTAL TIME: 32 min
SERVINGS: 24

2 separated eggs, separated
½ tsp baking powder
⅛ tsp salt
¼ brown cup sugar
2 tsp vanilla extract
¼ tsp grated lemon zest
⅓ cup all-purpose flour

1. PREHEAT the oven to 190°C and line the baking sheets with parchment paper.

2.In a large bowl beat the egg whites with an electric mixture on medium speed, until foamy while slowly adding the baking powder, salt, and sugar to it. Continue beating on medium speed until stiff peaks form.
3. In another bowl combine the egg yolks, vanilla, and lemon zest, and beat with a fork until thoroughly mixed. Fold into the beaten egg whites until just combined. Sift the flour over the egg mixture and fold in until the batter is smooth and light. Drop 2 teaspoons of batter per cookie about 2″ apart onto the prepared baking sheets.
4. BAKE for 12 to 15 minutes, or until golden. Cool on the sheets for 5 minutes, and then remove to racks to cool completely. The cookies will crisp upon cooling. Dust with confectioners’ sugar if needed before serving. If there are leftovers, (which we don’t think is going to happen), remember to store it in a covered container.
